Chez Thuy: Boulder's choice for Vietnamese cuisine

Published: Apr 29, 2009

In its unpretentious location on 28th Street in Boulder, Chez Thuy Vietnamese restaurant  has put together an unbeatable combination of quick service, good-sized portions, reasonable prices and some of the most reliable, fresh and delicious food in the area.

Take, for instance, the grilled shrimp appetizer. At $12.95, these roll-ups of rice paper, cilantro, lettuce, cucumbers, bean sprouts, mint and shrimp marinated in lemongrass can be a meal in itself.

Other dishes, such as the stir-fries, hotpots and curries, make effective use of garlic, Thai basil and star anise. The lemon beef salad, at $12.95, and the seafood combo for $19.95 are also knockouts.

There's plenty here for vegetarians. Don't pay too much attention to the little red chili pepper emblazoned on the menu beside various items. Even the spiciest dishes can hardly be called hot. But most can be called very good and sometimes manage to be great.

The owner, Thuy, wouldn't have it any other way. In French, "chez" means "in the home of," and at her home away from home, Thuy presides almost nightly and attends to all the details of turning out a cuisine that fuses French and Chinese culinary traditions.

At a time when belts are tightening, a lot of patrons won't like Chez Thuy's new, more expensive menu.  Entree prices that were in the  low- to mid-teens now range from the mid- to high-teens.  Is it still worth the extra couple of bucks?  Yes, because even at the higher range, it's hard to find another restaurant serving food that is equally healthy, light and delicious.
